This is an easy chicken dish that tastes great!  Wrapping the chicken in bacon keeps is juicy and moist!

When you roll your chicken, be sure to tuck in the sides as best you can to keep the cheese from leaking out.  I served it with a little bit of homemade honey mustard sauce on the side!


  • 10 oz fresh spinach leaves
  • 1 cup shredded monterey jack cheese (or your favorite, swiss works well too!)
  • ⅓ cup sour cream
  • garlic powder
  • black pepper
  • 4 skinless, boneless chicken breast halves, pounded to ½ inch thick
  • 8 slices bacon
