Ingredients

  • 1 (15-ounce) can clean eating/vegetarian refried beans
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1-1/2 cups nonfat/low-fat plain Greek yogurt or nonfat sour cream
  • 3/4 cup shredded reduced fat cheddar cheese or monterey jack cheese or shredded cheese of choice
  • 1 green bell pepper, stemmed, seeded, and diced
  • 1 - 2 fresh jalapenos, stemmed, seeded, and diced or 2 tablespoons sliced pickled jalapenos (jalapenos optional, use more for spicier)
  • 1 heaping cup chopped tomatoes
  • 1 ripe avocado, peeled, pitted, and diced
  • 1 tablespoon fresh squeezed lime juice (from one lime)
  • 1 cup shredded romaine lettuce (shred by stacking leaves and slicing thinly across)
  • 1/4 cup chopped cilantro or parsley leaves
  • 1 cup clean eating salsa or enchilada sauce of choice to top (optional)
  • 1/8 teaspoon kosher or sea salt
