Healthy Meals Monday: Baked Mexican Fish

We are MOVING in one week and I’m trying to use all the halibut in our freezer so we don’t have to bring it with us.  I was sick of all our halibut recipes so I decided to try a new one. When my husband came home he yelled… “It smells so good!” I always know that is a good sign.  One thing I love about Halibut is that if you cook it the right way it tastes like chicken instead of fish. My kids loved this “chicken” meal.

Ingredients

  • 1 1/2 pounds cod or halibut
  • 1 cup salsa (however spicy you want it)
  • 1 cup lowfat shredded Cheddar cheese
  • 1/2 cup coarsely crushed corn chips
  • 1 avocado – peeled, pitted and sliced
  • 1/4 cup light sour cream
  • black beans
  • warm tortillas
