Feast your eyes on this bad boy. Yep, that’s a whole lot of porky, cheesy goodness going on between those two slices of bread. And it is gooood.
And I suppose you guys are thinking, “is that ANOTHER sandwich she is posting? Seriously?” Yes. This is another sandwich. And yes, it turns out my life now revolves around which sandwich I will be eating next (and also, using up ALL the leftovers), but you know what? I don’t even care. Because when the sandwich is this good, zero f*cks are given. You see, pork and cheese is a magical combination. Just think of smoky, salty bacon paired with melting brie. Or prosciutto served with a milky slice of buffalo mozzarella. But then you add a little sweetness like the caramelised onions you serve with the bacon and brie or the wedge of melon accompanying the prosciutto and mozzarella and you have perfection.

- ½ cup grated mature cheddar
