GAH – today is the last day of July and it hit me how fast time seems to be flying by this year…

But wait, it’s not just this year – but the last several years – or more specifically the last fifteen…

Today happens to be the day my daughter registers for another year of high school, and I am flummoxed as to where the years have gone…

Just like Robert Deniro’s character did in “Everybody’s Fine“, there are times when I look at my daughter and still see her like this:

It seems like just yesterday we were pretending her bed was a ship and I was the crazy octopus lady from The Little Mermaid who would get her if she so much as dangled a foot off it…


  • For the Quinoa/Jelly layer:
  • 2 cups quinoa flour (I used Bob's Red Mill)
  • 1 cup hazelnut meal (I used Bob's Red Mill)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1½ teaspoons pumpkin pie spice (blend of cinnamon, ginger, lemon peel, nutmeg, cloves, cardamom)
  • ¾ cup brown sugar
  • ½ cup coconut oil melted
  • 2 eggs
  • 1 cup applesauce
  • 2 tablespoons raspberry preserves
  • For the Peanut butter layer:
  • 2 tablespoons coconut oil
  • 4 tablespoons peanut butter
  • 1 tablespoon brown sugar
  • handful of dark chocolate chips
