Thai Meatballs with Sweet Chili Sauce

There are few things in life more succulent than a pork meatball. Especially when it’s a pork meatball loaded with the bold flavors of lemongrass, cilantro, garlic, and ginger. 

There are a few perks for you, if you decide to make these Thai meatballs for your next party or holiday gathering:

  • 1 pound ground pork
  • 1 tablespoon lemongrass, finely minced
  • 2-3 cloves garlic, smashed
  • 4-5 green onions, chopped (white and light green parts only)
  • 1 inch fresh ginger, grated
  • 1 carrot, grated
  • 1/2 cup packed cilantro
  • 2 tablespoons fish sauce
  • 1.5 tablespoons Coconut Aminos, or low sodium soy sauce
  • 1/2 teaspoon chili flakes
  • Black pepper
  • Oil, for pan frying
  • 3 tablespoons rice vinegar
  • 1 lime, juiced
  • 1 tablespoon fish sauce
  • 1 tablespoon finely grated carrot
  • 2 tablespoons honey
  • 1/2 teaspoon chili flakes
  • 1/2 tablespoon cilantro stems, finely diced
  • 1 teaspoon arrowroot powder, or cornstarch
