Creamy Spinach and Artichoke Pasta

A luscious creamy pasta that's easy enough for midweek but also impressive enough for company!

Ingredients

  • 10oz linguine or fettuccine (or other long pasta of choice)
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • 1/2 onion, finely chopped (~1/2 cup)
  • 1 cup heavy cream
  • 1 cup milk (I use low-fat)
  • 3/4 cup freshly grated parmesan cheese
  • 3 large handfuls baby spinach leaves
  • 14oz jar artichoke hearts, drained and halved or quartered
  • Salt and pepper
  • Finely chopped parsley
  • Freshly grated parmesan cheese
