Easy Plant-Based Breakfast

Most people start their day off with heavy carbohydrates, hard to digest fats and an overload of sugars. Instead of feeling light, awake, recharged and ready to go, they feel tired, overly full, foggy and often depressed. Breakfast should be delicious, it should be filled with nutrients and it should be energizing. I love starting the day off with foods that nurture my body and fill me with the healthy fiber, fats and protein that I need to sustain my active lifestyle.
This delicious plant-based breakfast is one of my favorite quick go-to morning meals. I use Purely Elizabeth’s Ancient Grain Oatmeal, but you can use any oats in this recipe (gluten-free is best!). To keep the sugar low, I sweeten with xylitol or stevia. If you’re looking for another low glycemic sweetener, coconut sugar works fabulously with recipe as well.
1 1/2 cups Purely Elizabeths Oats (or your personal favorite oats), cooked
- 1 tablespoon ghee or coconut oil
- 1 to 2 tablespoon sweetener of choice
- 1/4 cup almond mylk (we use Local Juicery cold-pressed almond mylk)
- 1/2 teaspoon maca powder (optional)
- 1/4 green apple, chopped
- 2 strawberries, sliced
- 2 tablespoon of favorite superfood blend (I use VivaPura)
