Vegan Elote Tostada - Radiant Living

I don’t usually make complicated meals. I’m all about sticking to basic easy ingredients. I like to share things on this blog that will help busy people like me make healthy choices. Once in a while though, I come up with a more complex recipe (but not that complex!!) that has to be shared… This is one of those. It’s pretty simple when it comes down to what it is, its just the components that make it a tad bit more time consuming (but well worth it!).

This dish was inspired my a restaurant in Sedona, AZ (my home town) called Elote. They serve an amazing elote dish that is rich and delicious. This is my spin on a vegan elote recipe that is healthier and lighter. I incorporated it into a tostada.

  • 1/2 teaspoon chipotle
  • 1/4 teaspoon mild chili powder
  • 1/2 tablespoon smoked paprika
  • 2 tablespoons lime juice
  • 4 avocados, seed removed
  • 2 red or yellow heirloom tomatoes, seeds removed (see this video on a great easy way to remove)
  • 1/2 cup minced cilantro
  • 1/2 cup minced white onion (about 1/2 large onion
  • 3 large Portobello mushrooms, sliced
  • 1 tablespoon coconut oil (melted)
  • 1 tablespoon coconut sugar
  • 1 tablespoon nama shuyo
  • 1 bag of sprouted organic corn tortillas
  • 1/2 head of purple cabbage, sliced
  • 1 head of romaine lettuce, chopped
  • Salt to taste
