COOKIE KICK

I’m on a cookie kick! And why not make them healthy and nutritious? I was inspired by Gabrielle Bernstein (one of my favorite motivational speakers and just seemingly an awesome chick) to make these gluten free, dairy free, sugar free cookies. Gabby is doing no sugar (processed) in her diet and I really want to jump on that wagon too. I’ve done it in the past and currently eat no sugar besides fruit sugar and sometimes some coconut sugar but I really want to be more dedicated. I feel much better in my body when I’m not overdoing the sweets. Gabby uses a super cool app called streak to track her progress, I just downloaded it and plan to start after Christmas (making some super yummy raw truffles that have some sweetener and I can’t bare not to eat them!). Here is my recipe! I hope you enjoy <3 I sure enjoyed them for breakfast this morning!

Ingredients

  • 2 tablespoon coconut flour
  • 1 1/3 cup coconut shred
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 cup gluten free oats
  • 1/2 cup almonds
  • 1 large banana
  • 3 droppers of liquid stevia (droppers not drops!)
  • 1 tablespoon coconut oil
  • 1 tablespoon ground flax seed
  • 1 tablespoon vanilla extract
  • 1 tablespoon almond extract
  • 1/2 to 1 teaspoon sea salt
