Refreshing Kale Chopped Salad

KALE CHOPPED

This was a simple salad I made yesterday that turned out really delicious! Lately it’s been really hard for me to eat anything other than fruit, I’ve had to force myself to eat a well-rounded diet for my little growing baby. If I wasn’t pregnant, i’d probably be a frutarian for the summer! It’s just so hot. This recipe has mint, cucumber and parsley in it, all are very cooling and refreshing. I also used pumpkin seed oil for the dressing base, if you read my last post on omegas, you know how important they are for us and pumpkin seed oil has omegas and a good amount of zinc, it also happens to be very tasty!

Ingredients

  • 1/2 head of kale, de-stemed and chopped
  • 8 baby tomatoes, cut in half
  • 1/2 small cucumber, peeled and quartered
  • 1/4 cup of walnuts
  • 2 tablespoons of sunflower seeds
  • 8 mint leaves, minced
  • 2 tablespoons of parsley, minced
  • 2 tablespoons of pumpkin seed oil
  • 1 small date, pitted
  • 2 teaspoons of nutritional yeast
  • 1/4 teaspoon of salt
