Being free from the burden of final exams is one of the best feelings ever. Not only am I blogging without the guilt of being a procrastinator of my school work, I had the chance to go get some Christmas shopping done on this glorious day. Not once today did I worry about anything other than “What should I get for so-and-so this Christmas?”. Life is so great right now; it’s utterly bliss.

Being one of the last of my friends to finish my exams, I was extremely unfocussed. I would spend the day trying to convince myself to study, but end up listening to Christmas music, making lists of Christmas plans and recipe ideas instead. After much procrastination, I’d end up in the kitchen making food. These Ferrero Rocher truffles are one of the products of my unavoidable procrastination. And they are insanely good.

Ingredients

  • FILLING
  • 1 cup toasted hazelnuts
  • ½ cup dates (about 8 Medjools), pitted
  • 4 tbsp water
  • 1 tbsp almond butter
  • ¼ tsp salt
  • TRUFFLE
  • 1 cup dates, pitted
  • ¼ cup semisweet chocolate
  • 1 tbsp coconut oil
  • 1½ tbsp cocoa powder
  • ½ tsp salt
  • COATING
  • ¾ cup toasted hazelnuts
