CROCK POT CHICKEN TACO SALAD

Aren’t nights when husbands kindly offer to make dinner the best? Even if their kitchen skills are cute-ly lacking, I feel so loved and served when David takes over kitchen duty. Oh, my other favorite is when he does grocery shopping. That’s a lot of work (and lifting!).

When David makes dinner, he usually does Mexican – stuff like this recipe. (These enchiladas are kind of his specialty!)

4 boneless, skinless chicken breasts

1 cup salsa

5 ounces diced tomatoes

1 tablespoon taco seasoning

15 ounces black beans

Ingredients

  • 4 boneless, skinless chicken breasts

  • 5 ounces diced tomatoes
  • 1 tablespoon taco seasoning
  • 15 ounces black beans
  • 1 avocado
  • 4 cups lettuce
  • Additional toppings such as cilantro, black olives, tortilla chips, or corn
