With the dead of winter starting to get to me, I had to shake off the snow and make this fruit salsa (if of course, you kind find some strawberries that aren’t entirely white in the middle!) This is a light and fresh snack that is the perfect amount of sweet served on yesterday’s cinnamon sugar tortilla chips.
2 green apples, peeled and diced
1/2 lemon, juiced and zested
2 kiwis, peeled and diced
1 pound strawberries, de-stemed and diced
1/2 pound raspberries
2 tablespoons brown sugar
Stir together apples, lemon juice and lemon zest to prevent browning. Add kiwis, strawberries, raspberries, and brown sugar. Mix well and serve on cinnamon sugar tortilla chips.
