CURRY PINEAPPLE TURKEY BOWL

Healthy. Fresh ingredients. Eating this indulges my alter-ego who runs ten miles a day and does yoga in the mountains and eats all organic food. I don’t really do any of that, but this is healthy and easy, so even I managed.

CURRY PINEAPPLE TURKEY BOWL

Serves 3-4

1 pound ground turkey

1 tablespoon olive oil

2 teaspoons curry powder

1 teaspoon cinnamon

2 cups pineapple, cubed

3 cups brown rice, cooked

1 cup carrots, shredded

1 cup zucchini, shredded

Salt & pepper

Heat turkey in a large skillet over medium heat with oil, curry powder, and cinnamon. Cook until browned, about 10-12 minutes. When 2-3 minutes of cook time remains, add pineapple, carrots, and zucchini.
