I blew it last week when I made my menu. I completely forgot that today was Mother’s Day. My husband told me earlier this week that he would barbecue steaks for Mother’s Day, so yesterday I made ribs in place of steaks. This morning before I woke up (and could pull steaks out of the freezer to thaw), my husband went to the store and bought steaks for dinner tonight. And he bought enough for an army, so this week I will be focusing on recipes that use up leftover steak at the beginning on the week.

Monday – Use leftover steak to make Southwest Steak Salad with Honey Lime Dressing
Tuesday – Make steak tacos by adapting Tegan’s Taco Recipes. I will cut up 2 cups bite size pieces of steak, add 1 1/2 – 2 cups diced tomatoes and 1 -2 tablespoons of taco seasoning and cook it over a medium heat until it is heated through. Serve with Mexican Rice and Black Beans.
Wednesday – Use leftover steak to make Steak and Artichoke Frittata. Serve it with Strawberry Spinach Salad with Raspberry Vinaigrette.
Thursday – Sonoma Chicken and Pasta. Serve with a garden salad.
Friday – Use leftover sauce from Sonoma Chicken to create a Pasta Bake. Serve with Nutty Broccoli Salad.
Saturday – Pizza using gluten-free pizza dough and my easy pizza sauce. Serve with a garden salad.
