King Ranch Chicken is one of my all-time favorite casseroles. I absolutely love it. It is Mexican cheesy chicken goodness. I decided to mix things up a bit and turn the casserole into taquitos. I mixed up the filling and rolled it up in corn tortillas and baked them. To put this dish really over the top, I served the taquitos smothered in queso. Heavenly! We both loved this variat
