Chicken Scallopini with Sage and Fontina Cheese

There is something about just the word “scallopini” that seems complicated. Even I rarely cook it, but since I have been looking for more fulfilling main courses after I have cut the carbs from my diet, I thought this might be comforting. I really appreciate how the recipe poaches the chicken, which in turn makes it tender and moist. I served this with spinach spaghetti for the rest of the family
