Culinary School: Week 1

After many years of informal cooking and baking experience in both home and commercial kitchens, it was time for me to take the plunge and go to school.... culinary school, that is! I plan on blogging my thoughts each week, recapping things I've learned and the overall experience. Doing so will also help me further absorb what I've learned, hopefully making me a better student in the long run. So
