Homemade Granola Bars

As soon as he sits down to eat it, the pitter patter of little toddler feet run over like a moth to a flame, and M starts vigorously signing "more" and "please" (we're big fans of baby sign language here).  There aren't too many foods Miss Picky gets that excited about, so I thought it would be fun to make some myself. Feel free to substitute dried fruit, nuts, or any combination for the chocolate.br /br /bHomemade Granola Bars/bbr /Adapted from a href="http://weelicious.com/2011/09/06/chocolate-chip-granola-bars/"Weelicious/abr /Makes 15 barsbr /br /4 cups old fashioned oatsbr /1/4 cup whole wheat flourbr /1/2 cup shredded unsweetened coconutbr /1/3 cup brown sugarbr /1 cup semisweet chocolate chipsbr /1/2 teaspoon kosher saltbr /1/2 cup canola oilbr /1 teaspoon vanilla extractbr /1/2 cup honeybr /br /1. Preheat oven to 325 F.br /2. Combine the first 6 ingredients in a bowl.br /3. In a separate bowl, whisk together the remaining ingredients.br /4. Pour the wet ingredients over the oat mixture and stir to combine.br /5. Place granola mixture on a baking sheet lined with a silicone mat or parchment and shape/press into a rectangle, about 13 x 9 x 1 inch thick.br /6. Bake for 25-27 minutes, until edges just begin to brown.br /7. Allow to cool completely for at least several hours, then cut into bars. br /8. Wrap each bar individually in plastic wrap and store bars in an airtight container for up to several weeks./div
