Mango Cake with Mango Cream Frosting

Summer is almost here...and do you know what that means? Mangoes are in season again! And yes, that makes my family and I happy! We love mangoes, you know. Though we enjoy eating it plain, we also love savouring this delicious fruit in different forms. We love making salad,  ice cream , milk shakes and ice candy with it.  Indeed, the wonderful taste of ripe mangoes never fail to amaze our taste buds.

Last weekend, I found a good deal and I decided to get more than 2 dozens of Ataulfo mangoes from the store. After making mango shake and popsicles, I thought of making something more special. I'm talking about this Mango Cake with Mango Cream Frosting...

Ingredients

  • 1 1/3 cup cake flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 4 eggs, white and yolk separated
  • ¾ cup sugar
  • ½ tsp vanilla extract
  • ¼ cup evaporated milk
  • ½ cup mango puree (see recipe below for homemade mango puree)
  • ¼ cup olive oil
  • 1 Tbsp butter, melted
  • ¼ tsp cream of tartar
  • ¼ cup fresh ripe mango bits (preferabley Ataulfo or Manila mango)

  • 2 Tbsp mango puree
  • 3 cups heavy whipping cream
  • ½ cup sugar
  • 1 cup fresh ripe mango bits (preferabley Ataulfo or Manila mango)

Ingredients

  • 2 medium sized ripe mangoes (preferabley Ataulfo or Manila mango), peeled and sliced according to desired size and shape ( I  usually make them into small balls)

Ingredients

  • 2 ripe mangoes (preferabley Ataulfo or Manila mango), peeled and pitted
  • 2 Tbsp sugar
  • 4 Tbsp water
  • 1 tsp fresh lemon juice
