Maple Almond Ice Cream Sandwiches #SundaySupper

This week I began submitting my latest novel to agents.

I’m guessing most of you don’t know what that entails (lucky you!), so I’ll give you the basics.  After writing, reading, revising, getting feedback from Mom and her red pen, and revising again, my novel is ready to go out.  Fatigued by the whole process, I am not quite done with my last pass but I wanted to get the ball rolling, so I went ahead and sent out letters.  #rebelwriter

I have a basic letter I use to send to all agents, but I do personalize them all.  I choose agents to submit to based on their likes and sometimes the other authors they represent.  In each letter, I try to connect with them, noting what about my novel and/or me they may appreciate.


  • 2 cups finely ground, blanched almond flour (I used Bob’s Red Mill)
  • ½ teaspoon baking powder
  • 1/3 cup pure maple syrup
  • 2 teaspoons vanilla extract
  • 1 pint ice cream of choice
  • ¼ cup coconut oil, melted
  • 2 tablespoons carob or cocoa powder
  • ½ cup almonds, chopped
