Light Chicken Sanguchon

Light Chicken Sanguchon

I know what you may be thinking after looking at the picture of this sandwich. With the amount of ingredients I’ve used to make it, you can hardly categorize it as light. However, it is in fact light in the sense that many of the ingredients are vegetables, and it’s also a lighter version of the Peruvian sanguchon because I’ve used Flatout Flatbread Foldits instead of regular bread to make it. This flatbread is completely different from Peruvian rosetas (crusty rolls used to make all kinds of huge sandwiches called sanguchon due to their size).

Ingredients

  • 6 Flatout Foldits
  • Lettuce leaves
  • 1 tomato, sliced
  • 1 avocado, sliced
  • Salt and pepper
  • Mayonnaise
  • 1 roasted chicken breast, shredded
  • String potatoes
  • 6 fried eggs (sunny side up)
  • 1 small red onion, finely diced
  • 4 small bell peppers, finely diced
  • 2 sprigs cilantro leaves
  • Salt and pepper
  • 1 tablespoon olive oil
