Ingredients

  • 1 cup quinoa
  • 1 cup water
  • 1 pound tomato, chopped
  • ½ cucumber, diced
  • 4 green onions, sliced
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 2 tablespoons fresh mint, chopped
  • 4 tablespoons fresh parsley, chopped
  • 2 garlic cloves, minced
  • Salt (to taste)
