Chocolate Mint Grasshopper Sandwich Cookies

These cookies were inspired by a restaurant dessert at a place called Peter Christian's Tavern in New Hampshire, which we used to visit when I was growing up. Their recipe was called Grasshopper Brownie Chip Pie, a brownie base with a creamy mint filling studded with chocolate chips. Here is my version--in a portable, bite-sized sandwich cookie form!

Ingredients

  • 2 cups (500 mL) all-purpose flour
  • 6 tbsp (90 mL) unsweetened cocoa powder
  • 1 tsp (5 mL) baking powder
  • 1 tsp (5 mL) baking soda
  • 1/2 tsp (2 mL) espresso powder
  • 1/2 tsp (2 mL) salt
  • 1/2 cup (125 mL) unsalted butter, room temperature
  • 1 cup (250 mL) granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp (10 mL) vanilla extract
  • 1 cup (250 mL) whole milk
  • 2 cups (500 mL) sifted confectioner's sugar
  • 1/2 cup (125 mL) unsalted butter, room temperature
  • 1/4 tsp (1 mL) salt
  • 2 tbsp (30 mL) creme de menthe liqueur (see note)
  • 1/4 cup (60 mL) heavy cream
  • 3 tbsp (45 mL) heavy cream
  • 3/4 cup (175 mL) bittersweet chocolate chips
  • Creme de menthe or peppermint extract (optional)
