  • 6 scallions, chopped

  • A few leaves of fresh sage, julienned
  • 4 sprigs of fresh thyme, leaves removed and chopped
  • 1 large onion, chopped

  • 1 leek, cleaned well and chopped
  • Kosher salt and freshly ground black pepper
  • 2 Granny Smith apples, peeled, cored and chopped
  • 4 tablespoons melted butter
