- 2 cups diced red onion (2 medium or 1 large)
- 1¼ cups diced green pepper (1 large)
- 1½ cups diced celery (4 stalks)
- 2 tablespoons minced garlic (4 cloves)
- 1 pound green beans, trimmed
- 2½ cups long grain white rice, rinsed and drained
- 6-8 cups low-salt chicken broth, divided
- ½ teaspoon dried thyme
- 6 green onions, chopped or sliced thinly
