Blueberry Banana Muffins

Gluten free baking has always confused me. Instead of regular flour, you now have the option to use coconut flour, almond flour, tapioca flour, arrowroot flour, and the list goes on. I used to bake purely with coconut flour, but decided to expand my baking repertoire by purchasing some tapioca flour and experimenting with it! Enjoy this blueberry banana muffin recipe

P.S. you don’t even need to add sugar if you want because the bananas and blueberries are sweet enough!

Ingredients

  • 1/2 c tapioca flour
  • 1/2 c almond flour
  • 2 tbsp stevia powder (or honey)
  • 4 eggs
  • 1 c mashed bananas (2 medium bananas)
  • 1 c blueberries
  • 1 tbsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla extract
