Like most of us, peanut butter and jelly sandwiches will always hold a special place in my childhood memories (and tummy!) so I decided to create a Healthy PB&J Smoothie! Peanut butter and jelly sandwiches are the perfect combination of salty and sweet, such an easy and satisfying lunch, and are such a hit with kids. Unfortunately, the sandwiches we used to eat made out of white bread and super processed peanut butter are not the best kid-friendly fuel. I’ve created this creamy PB&J smoothie that is sure to satisfy all your kid’s needs (and mom and dad too!) without sacrificing nutrition. It even contains chia seeds for extra protein and fiber making it the perfect lunch!
- 1 cup almond milk
- 1.5 cup strawberries
- 1 cup steamed cauliflower, frozen
- 2 Tbsp peanut butter
- 1 Tbsp chia seeds
