I knew I was going to love this dinner since the first time I saw the recipe. But like lots of other recipes, it went onto the master list (yes, I do have a master list, it’s even categorized) and then somehow was forgotten. Luckily I recently came across it again on another blog so I decided to make it that night. It’s that kind of recipe – the kind you can make immediately because you already have everything you need, or at least a reasonable substitute. I love those.
These noodles totally lived up to expectations. They really were delicious, and the ease of this recipe can’t be beat. It takes only 15 minutes from start to finish, with very minimal chopping or prep work. Most of your time is spent waiting for the water to boil. It’s very easy to customize this dish too – add some roasted red peppers, shrimp or chicken, sprinkle with a few chopped peanuts – you could have an entirely different meal just by adding a few things to the mix. Keep all the staples for the recipe on hand and you’ll always have an option for getting a delicious and satisfying meal on the table on even the busiest nights.
