Coconut Covered, Caramel Stuffed, Chocolate Cookies

Hello friends!

My apologies for the super long, overly-descriptive title, but I just wanted to make sure we were all on the same page.

It’s that time of year again. Those little girls in their green sashes, trying to sell me millions of boxes of cookies, are everywhere. I say millions of boxes, by the way, because there are oh I don’t know, six Samoas in every box?

It seems that way every time I eagerly rip open a box. My childish grin gradually transforms into a grumpy scowl as I realize I ate all the cookies in under 10 minutes.


  • 1 1/4 cups flour
  • 3/4 cup cocoa powder
  • 1 tsp baking soda
  • 2 tsp cornstarch
  • 3/4 tsp salt
  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 egg + 1 egg yolk
  • 1 1/2 tsp vanilla
  • 12 soft caramel candies (I used Kraft Caramels) unwrapped
  • approximately 1/2 cup shredded coconut
