Today will be a short post – and I mean it this time.
I realize I start posts out with that line and the complete intention of keeping it to 250 words and under…
but then I start rambling….
and my tummy starts grumbling….
and all I can think about it eating the food I’m sharing with you. Before you know it I’m at over 500 words and most likely lulling you all to a blissful midday nap.
BUT NOT TODAY.
No, today I am going to attempt to push myself into productivity and get some homework done. I’d love to say I’ve been perfectly studious this semester, but, well,
- 1 can coconut milk
- 2 tbsp red curry paste
- 1 large head cauliflower
- 1 can chickpeas, rinsed and drained
- 1/2 tbsp cornstarch dissolved in 2 tbsp cold water
- rice, for serving
