Green & Yellow Soyghurt Tofu with Saffron-Chilli Rice

Today I have prepared a very simple dish and immediately felt like this is something I need to take picture of and share with all of you. I haven’t thought through the recipe before I actually started, I pretty much cooked instinctively and with the ingredients I already had at home. I just mixed some soyghurt with garlic and tofu and then with veggies I have left. That’s pretty much it, but I fell in love with the taste it turned out very well!

  • 120 g rice
  • ½ onion, chopped
  • pinch of saffron
  • pinch of chilli
  • 150 g smoked tofu, cut in pieces
  • 100 g plain soyghurt
  • 3 smaller cloves of garlic, minced
  • 1 onion, chopped
  • 2 handfuls corn
  • 2 handful green peas
  • 1 handful green beans
  • salt and pepper to taste
