Ingredients

  • 3/4 lb organic gluten-free pasta (blend of brown rice, quinoa, amaranth, corn, etc)
  • 3 teaspoons olive oil divided
  • 1 lb chicken sausage (pre-cooked), sliced
  • 2 bell peppers sliced, you can use yellow, red or green (~3 cups)
  • 1 small onion, sliced vertically (~1 1/2 cups)
  • 1 (28 ounce) can organic crushed tomatoes
  • 8 ounces tomato sauce
  • 1/4 teaspoon red pepper flakes
  • 2 garlic cloves, minced
  • 1/2 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • salt to taste
  • 4 ounce goat cheese
  • chopped fresh basil for garnish (optional)
  • reserved 1/2 cup pasta water
