This fudge is incredibly rich, smooth and decadent. A small piece is very satisfying because it’s packed full of whole food goodness.
The hardest thing about this recipe is waiting for it to set in the freezer before you get to sink your teeth into it.
- 2 1/2 cups raw cashews (if you don’t have a high speed blender, soak your cashews for 8 hours and rinse well)
- 1/2 cup cocoa powder
- 2/3 cup maple syrup
- 3/4 cup filtered water
- 1/2 cup coconut oil
- 2 tbsp. freshly squeezed lemon juice
- 1 tsp. vanilla extract
