Ok, wait. How is today Friday? This whole holiday falling on Tuesday and taking off the Monday left me with a REALLY long weekend and a REALLY short week. Listen, I’m not complaining I just feel like this week went crazy fast and I did about zero real work.

For real. I was sitting on my couch last night watching my 12th episode of The Mindy Project and all of a sudden “Oh crap, tomorrow is Friday and I haven’t written my post yet.” THE WORST. Sometimes I just want to crawl into my bed instead of writing my post BUT then you wouldn’t get this gem of a post.

I’m not one of those low carb diet types of people but I have started counting my macros and I have had to start paying attention. You know what I noticed? I really like carbs. Mostly pretzels because they are hella crunchy and I could eat a whole bag in one sitting. So I make a few cuts where necessary.

In this case, those cuts are in the form of lettuce vs. tortilla. Honestly, I think the lettuce works WAY better here anyway. They are crunchy, light and pair perfectly with the meaty goodness that is this Thai-flavored ground chicken mixture. PLUS it means I can eat almost 1/2 pound of meat and not feel guilty because it’s wrapped in lettuce so it’s basically like eating a salad – right?

I actually majorly crave salad in the summer so this type of meal is exactly what I crave. I think these Thai ground chicken lettuce cups could also totally work with ground beef, pork or turkey but you know I have a major crush on ground chicken. Not like a weird unhealthy crush just an “OMG THIS WOULD TASTE AWESOME WITH GROUND CHICKEN” crush.

Plus it’s way cheaper than all the other ground proteins so that makes it even baller in my book.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 5 green onions, thinly sliced
  • 1 tablespoon grated lemongrass
  • 1 tablespoon grated ginger
  • 1 tablespoon grated garlic
  • 1 tablespoon chili garlic sauce
  • 1/2 lime, juiced
  • 3 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon fish sauce
  • 2 teaspoons dark brown sugar
  • 1/4 cup minced cilantro
  • 2 tablespoons minced mint
  • 1 head bibb lettuce, outer leaves carefully removed, washed and pat dry
  • 1/4 minced peanuts
