I know I mentioned that I am back on the fitness track. It’s been going well so far. what I love most about my walks on the trail is letting my mind wander. I love to take in the all the different smells wafting through the air. Sweet smells from flowers and some from people grilling outdoors.
When I was shopping at Fresh & Easy, they had a great looking package of Jumbo Shrimp.
Peel and devein the shrimp and set in a zip log baggie; set aside In a bowl, combine the lemon juice and the garlic. Pour into the baggie with the shrimp Refrigerate at least 1 hour but no more than 2. Remove the shrimp from the bag and discard the marinade Place on grill and grill about 2 to 3 minutes per side
- about a pound of fresh jumbo shrimp
- ⅛ cup chopped flat-leaf parsley
- ⅛ cup chopped cilantro leafs
- 1 scallion, chopped
- Juice from ½ lemon
- 1 clove garlic, minced
