I am always looking for ridiculously simple recipes. This one was inspired by a recipe I found in one of my favourite books, ‘Great British Food’ from Canteen. The recipe was roasted tomatoes on toast, Max adapted it to something you would make on the hob rather than in an oven. It speeds up the cooking time and makes it more suitable for a lunch or snack. It’s a great thing to make when you can get your hands on special tomatoes that would be wasted on a sauce or boring salad. No recipe for this, we photographed all the ingredients we used so anyone can work the rest of this out. Just throw in some good Olive Oil and seasoning.
