Layered Mexican Chicken Salad

Are you a fan of the Food Network? I’m a huge fan of the cooking shows, or demonstration shows as they call them. I’m always looking to learn something new in the kitchen whether it’s new recipes or techniques. I’m not such a big watcher of the competitive shows, however. With one exception. Chopped. I love that show! The looks on the chefs’ faces when they open those mystery baskets is just priceless. I have no idea how in the world they come up with a recipe using such seemingly mismatched ingredients in the timeframe they’re given. It’s so interesting to watch them work.

Ingredients

  • 1 lb. chicken tenders
  • 1 oz. pkg. taco seasoning mix
  • 1 tblsp. olive oil
  • 7.6 oz. whole wheat couscous
  • 3/4 cup chopped green onion
  • 3/4 cup chopped fresh tomato
  • 3/4 cup chopped red or green bell pepper
  • 3/4 cup chopped fresh cilantro
  • 1 lime
  • 1 tsp. salt
  • 4 tortilla bowls (if making individual salads) or 4 cups tortilla chips (if making one large salad)
  • 1 cup salsa (red or green, mild or hot)
  • 8 oz. Sargento® Fine Cut Shredded 4 Cheese Mexican
  • 2 cups shredded lettuce
  • 1 avocado, sliced
