Before we get to the recipe, I have to tell you that it was inspired by a bag of beef jerky. I know, it might sound weird to be inspired by jerky, but this was one of the best tasting jerky meats I’ve ever had! I loved it so much that I just HAD to recreate the flavor.

Now, I bet you’re curious what brand jerky it was, right? Well, it’s from a gourmet meat snack company, Boyds Specialties LLC, right here in Southern California – it’s da bomb diggity! They’ve had 60 years to perfect their meat marinades, so I just used the listed ingredients on the bag as a guide to create this one. And I’m glad to report that after several attempts, I finally got a marinade that I love!

Grilled Pineapple Tomato Chicken

The first step to making this chicken is to marinate it for at least 24 hours. I like to reserve 1/3 cup of the marinade for basting and add the rest into a Ziplock bag with the chicken. To ensure the best flavor, I push out all of the air in the bag, so all the chicken comes into contact with the marinade. Then, after the chicken has been marinating for 24 hours, I grill it up and top with a bit of chopped cilantro for a tasty chicken dinner.

  • 1/3 cup water
  • 1/3 cup pineapple tidbits (pureed)
  • 1/2 Can tomato paste (about 3 ounces of tomato paste)
  • 2 tablespoons chopped cilantro
  • 1 tablespoon lemon juice
  • 3 cloves minced garlic
  • 1/2 teaspoon coarse salt
  • 1/2 heaped teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground pepper
  • 1/8 - 1/4 teaspoon cayenne
