Ingredients

  • 2-3 Tbsp olive oil, divided
  • 1/4 cup yellow onion, diced
  • salt and pepper to taste
  • 4 cloves garlic, chopped
  • 1 pound cubed chicken breast
  • 1 tsp Italian seasoning
  • 1 cup raw quinoa, or 12 oz rigatoni pasta
  • 3 Tbsp butter
  • 3 Tbsp flour
  • 3 cups whole milk
  • pinch of nutmeg
  • 1 heaping cup grated Parmesan cheese
  • 12 ounces artichoke hearts, quartered {I used jarred, packed in oil and drained}
  • 1 cup shredded mozzarella cheese
