Peace Through Pie

Ingredients

  • Flaky Pie Crust Dough (see recipe below)
  • 1/3 cup sliced almonds; toasted
  • 2 to 3 pears; peeled, cored and thinly sliced (ideally sliced with a mandoline)
  • 2 tsp. minced crystallized ginger
  • 1 to 2 tsp. sugar; plus more for garnish
  • A pinch of sea salt
  • 2 tbsp. unsalted butter; melted
  • Garnish: Powdered sugar

Ingredients

  • 1-1/8 (5 oz.) unbleached flour; plus more for dusting surface
  • ½ tsp. sea salt
  • 1 tsp. sugar
  • 8 tbsp./1 stick/1/4 cup cold, unsalted butter cut into small pieces
  • 3 tbsp. of ice water; plus more if necessary
