Ingredients

  • 2 quarts chicken stock
  • 10 corn tortillas
  • 2 cups shredded chicken
  • 6 medium tomatoes
  • 1 medium yellow onion
  • 1/3 cup olive oil
  • 4 cloves garlic
  • 2 TBS Mexican oregano, dried
  • 2 tsp unrefined salt
  • 10 corn tortillas
  • 2 cups lard, tallow, palm shortening or coconut oil
  • 1/2 tsp salt
  • 4 avocados (fuerte or haas)
  • 1 bunch cilantro, chopped
  • 8 oz queso fresco, crumbled (or cheese of choice)
  • 1/2 cup sour cream or yogurt
