Pie, in all forms of it’s glory, is one of my favorite desserts… especially in Summer. But when it’s shaped like a little pocket and fits in the palm of your hand? Praise Jesus! You can’t let #SummerDessertWeek pass you by without trying these heavenly Blueberry Cardamom Hand Pies. Trust me, you’ll be ready to make another batch as soon as you take the first bite. They’re incredibly easy and quick to put together, too!
- 2 pie crusts (refrigerated or from scratch)
- 2 c fresh blueberries
- 1/2 c granulated sugar
- 2 tbsp cornstarch
- 2 tbsp fresh lemon juice
- 3/4 tsp ground cardamom
- 1 lg egg, beaten with 1 tbsp water
- Adams Extract Vanilla-Cinnamon-Sugar, for dusting
