Cool and Refreshing Asian Cucumber Salad

Keeping it simple . . .

When I make a salad it’s an elaborate event. I tear lettuce into bite sized pieces and chop everything but the kitchen sink on top of it. I whisk together a dressing, add a little cheese, then fuss with it until I’m finally satisfied with my masterpiece.

Cool Asian Cucumber Salad

I decided that tonight’s salad wasn’t going to be a masterpiece, just a simple dish of cucumbers to go with the chicken baking in the oven.

Crunchy English cucumbers marinated in an Asian dressing spiked with chili garlic sauce were a refreshing change from the usual lettuce, carrots, tomatoes and kitchen sink.


  • 1 large English cucumber, sliced
  • ½ cup green onion, sliced
  • 2 tablespoons rice vinegar
  • 1 tablespoon mirin
  • ½ tablespoon sesame oil
  • ¼ tsp chili garlic sauce
