I copy them from magazines, save them from my favorite blogs, and buy cookbooks galore. It’s a lot of work keeping all that organized, but worth the effort. That collection has saved me on the nights where I’m too tired, and not in the least inspired to be a creative cook.
Last night, was one of those nights. I lacked the energy make dinner until I found this chicken thigh recipe from Good Housekeeping Magazine. It required little effort on my part to put together, so it was perfect for my state of mind.
- 16 ounces boneless skinless chicken thighs
- 2 medium sweet potato , cut in 1" pieces
- 1 medium onion, cut into wedges
- 4 tbs thyme
- 2 tablespoons olive oil
- 3 tablespoons maple syrup
- 1 pinch salt
- 1 pinch pepper
