As my kids are getting older and becoming involved in more extracurricular activities, I find my available time severely limited. Perhaps it’s not the kid’s activities at all but rather all of the time I spend working on the blog – we’re talking at least 10 hours a day.
I spend my typical day cooking (wrecking my kitchen) all morning, then taking photographs (wrecking my dining room) and working on the computer (wrecking the couch area in the family room) until it’s time to pick-up my children from school. Then it’s homework and picking-up the mess (and sneaking back to the computer), which rarely leaves me time to prepare dinner (unless I was testing a dinner recipe), which often results in another night of ordering out. One thing I have thought about is how I can make dinner preparation faster and easier so we aren’t tempted with ordering off-plan.
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 2-3 teaspoons Garlic Herb Seasoning Blend
- 2 tablespoons olive oil for sauteing
- 1 cup commercially prepared marinara sauce, warmed
- 4 ounces fresh mozzarella cheese, sliced
- basil or parsley for garnish
