Cabbage From My CSA + Our Intern’s Recipe for Thai “Bland” Soup

This soup base can also be used in a number of different Thai dishes including porridge or a spicy southern Thai beef soup by just adding a few more ingredients. Bland soup is perfect for using those leftovers that you don't know what to do with. Once you make the base, you can toss whatever you have in your fridge or pantry into the pot and have a delicious soup in about an hour!

Ingredients

  • 1½ cups water
  • 16 ounces carrots, peeled and sliced into 1-inch pieces
  • 1 small onion, cut into ½-inch pieces
  • 2 tablespoons reduced-sodium soy sauce
  • 3 cloves garlic, crushed
  • 1 medium Napa cabbage, sliced into 1-inch ribbons (about 2 pounds)
  • 1 pound cooked boneless, skinless chicken breast (we used frozen leftover chicken)
  • 2 green onions, thinly sliced
