Hope you had a fantastic week! I’m counting down the seconds to our annual July 4th Town Parade here in Telluride, CO. I’ll be bringing a BIG cooler with these margaritas, these kebabs and this Cherry Cobbler with Maple Oat Topping. It’s going to be an epic parade this year with bright sunshine and heaps of people lining the streets of our small mountain town. When the fighter jets fly over for the kick off I get serious goosebumps. This place is like no other this time of the year!

Ingredients

  • 3/4 cup old fashioned rolled oats
  • 3/4 cup white whole wheat flour
  • Pinch of salt
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cut into 1/4
  • inch pieces + 2 tablespoons unsalted butter melted
  • 1 egg lightly beaten
  • 1/4 cup unrefined brown sugar (coconut sugar or sucanat)
  • 6 cups fresh cherries, stemmed & pitted
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon pure vanilla extract
  • 1/3-1/2 cup pure maple syrup
  • Pinch of salt
