Oh my stars, it’s time for adorably easy galaxy cupcakes!
I’m loving the galaxy trend that is all over the internet these days. Fun colors, stars, moons and all things space inspired.

I love opportunities to get in the kitchen with my girls for baking moments that I know will turn into sweet memories. My girls have always loved learning about space, a curiosity encouraged by their aunt and uncle who are both science teachers. From moon night lights to glow in the dark stars on their ceilings. Making and enjoying these galaxy themed cupcakes were a fun way to spark space related conversation and learning.
While I have many recipes I make from scratch, we love using Pillsbury mixes when baking together. My youngest daughter is on a never ending quest for increasing independence and being able to do so much of the work on her own really makes her feel proud.
She absolutely loves to cook and bake and I love to encourage it. If I play my cards right I might end up with a cute little chef making our dinners in the near future.
With a little help from mom, and Pillsbury, she’s the queen of the kitchen.
EASY GALAXY CUPCAKES
These cupcakes we so simple, and we love how they turned out. We used Pillsbury Funfetti® Cake Mix, Pillsbury Filled Pastry Bag, sprinkles in a galaxy colored theme, fun holographic star cupcake wrappers and topped some of our cupcakes with cute little glittery star toppers.

While we love baking for the holidays, I think it’s little moments like this, everyday celebrations, where we can really bond over baking. Holidays are great for baking, but there is usually so much going on and a healthy dose of holiday stress for mom.
Moments like these, baking treats together just for our own fun little celebrations, really are my favorite. That whole “the days are long but the years are short” thing – it’s SO incredibly true. I’m realizing more than ever how important it is to find time for little moments like these that will turn into memories.
